Get Plant-Forward Meals To Your Door This Fall

This summer was a blast, but my eating habits were all over the place. I caught up with friends over brunch, bbqs, and late nights, and I did some day trips where food was the highlight.

Now that fall is coming and the pumpkins are out, it really feels like it's time for a fresh start to eating right. Even when I cook, I'm not able to prepare my meals because I am just not that into it. Who likes eating leftovers all week?! I'd also like to eat less meat, but every meal I prepare involves either meat or mac 'n' cheese, so I don't know where to start.

I was looking for easy plant-based recipes when I saw an ad for Thistle, a plant-based meal delivery service.

Thistle promises to deliver healthy, chef and nutritionist designed, plant-forward meals directly to your doorstep. . I thought they might be super boring, but the menu on their website is so colorful and inspired by dishes from around the world. There was literally a Rainbow Salad with seasonal vegetables and green goddess dressing. I also noticed that they offer a variety of protein options, including meat!

I was so confused for a moment, but ultimately relieved; for every main dish, you can add a vegan or non-vegan protein. For example, on their nutrient-packed Enchilada Bake you can request either Chipotle Pinto Beans or Chipotle Chicken.

It's a plant-forward company but not restricted to vegan food; maybe it wouldn't look like the pictures, but I thought I'd give it a try anyway, since there were plenty of positive reviews and people really seemed to love it.

Thistle offers a weekly, rotating menu of seasonally-inspired meals, and I was excited to incorporate fall flavors to my diet in an easy, healthier way. With a flexible schedule and an easy way to cancel, I was ready to try it.

My first week's food arrived, and I have to say, the produce looked really fresh! Nothing was wilted or brown. I also loved that the company is working toward a carbon-neutral future and currently employs 100% recycled packaging.

I have to say, my first week was amazing. I started with the 24 Carrot Gold Muffin, and it was delicious. Not dry, thanks to the carrots! Every meal was so tasty and perfectly portioned, so I wasn't hungry after eating. Even when I skipped the meat or vegan protein option for some of my meals, I still felt very full.

Meals start at only $43.50 per week and $11.50 per meal, which is much more affordable than most meal delivery services. I will definitely stay with my subscription for now, especially for easy and healthy lunches while I'm still working from home. As soon as I actually gave myself the resources to do it, balancing my diet became so much easier. If you're trying to eat healthier but don't have the time to make your own meals, Thistle just might have the answer for you!
