To be honest, I’ve wanted to go vegan for a long time but never thought I’d be able to do it. Not only do I LOVE cheese, but I had no idea how I’d go about cooking vegan meals.

I love that the vegan diet is cruelty-free and sustainable, and there are vegan “cheese” options available nowadays, so I decided I would give it a go, just for the month of January—or should I say, “Veganuary”.

Breakfast and lunch will be easy—vegan pancakes for breakfast and a nice salad for lunch. I was most worried about dinnertime. I’m not a good cook without it being for a specific diet, let alone trying to pull off tasty vegan dinners.

Some of my vegan friends gave me tips and easy recipes. One thing they mentioned that piqued my interest was Green Chef, a recipe box that sends pre-portioned ingredients and recipes to your doorstep.

My impression of these types of services was always that they’d be complicated and overpriced, especially if it was for a specialty diet. Nevertheless, I thought I should look into Green Chef, since my friends seemed to love it so much.

Looking at the plans, I’ll admit, I was impressed to see how many diets Green Chef catered to—Vegetarian, Vegan, Lower Carb, Flexitarian and even Keto. When I noticed that their meals start at just £2.82, I was even more intrigued.

But would these meals be satisfying? I had a look at the menu and was surprised that some of the vegan options made my mouth water. Golden Turmeric Cauliflower Curry With Black Rice and Flaked Almonds and Bulgogi Portobello Mushrooms With Rice Noodles and Stir-Fried Veg are exactly the type of vegan dinners I’d always wanted to make but never knew how.

Then I read that the Green Chef subscription is flexible and I could pause or opt out at any time—I’d never be locked in. I decided to give it a try since I had nothing to lose. I signed up for the Vegan plan, 4 nights a week for 2 people—I could have the leftovers for lunch the next day!

My Green Chef box arrived right on time and I couldn’t wait to test it out. I was impressed that each ingredient was packaged separately and the packaging was mostly recyclable.

First up, was Korma Inspired Tofu Curry with Sweet Potatoes and a Spiced Peanut Sprinkle. The recipe card said it’d be ready in only 25 minutes. This felt too good to be true, but I was so hungry so I hoped it wasn’t.

Lo and behold, 25 minutes later my tofu curry was on the table. It was my first time cooking tofu and I was surprised at how much I liked it! I was already looking forward to having it for lunch the next day. Success!

The rest of my first week with Green Chef was no different. The Vibrant Nutty Veg Stir Fry with Peanut and Lime Dressing was probably my favourite of the week, the Mushroom Stroganoff With Speciality Mushrooms and Dill coming in close second.

I can’t believe I’m saying this, but Green Chef has transformed not only my diet, but my whole routine. It’s so convenient having pre-portioned ingredients delivered to your doorstep, with recipe cards that allow dinner to be ready in about 30 minutes. I never have to think about what I’m having for dinner anymore.

Even after Veganuary, I’ll still be sticking with Green Chef. Their recipes are delicious and healthy, and the service is so convenient for the price. If you want to change your diet or simply want to try making more home-cooked meals, I’d highly recommend Green Chef!
